Bread Machine Pound Cake

The Zojirushi bread machine has a cake setting. I first used the cake setting to make cornbread and later on I used it for banana bread.
However, I hadn’t used it to make any cakes until I found this pound cake recipe. It’s so easy to make and it tastes great. Incidentally, I froze the cake that we didn’t eat and that worked great.
For those of you with machines that feature a quick bread cycle, this recipe will work with that cycle too.
Traditionally, the pound cake was made with a pound of each of flour, butter, eggs, and sugar. That would not fit in a bread machine. So the recipe has been adjusted to fit in my two-pound machine.
Because I always have bread flour, that’s what I’m using for this recipe. However, all-purpose flour and cake flour should also work.
Remember, this is a cake recipe. So even though you’re making it with a bread machine, no yeast is required.
Baking Powder
If your pound cake doesn’t rise high enough, look at the age of your baking powder. This really became clear to me when I was making cornbread. Check out the big difference this can make.
Here’s a simple test to see if your baking powder is still good. Stir half a teaspoon of baking powder into a 1/4 of a cup of hot water. Does it fizz and bubble? If so, the baking powder is fine to use.
Pound Cake Tips
We usually eat our pound cake plain or top it with whipped cream. However, you can also top it with:
- Ice cream and chocolate sauce
- Strawberries and whipped cream
- Sliced bananas and warm honey
- Lemon curd
- Drizzled icing
Bread Machine Pound Cake Instructions
This recipe uses the cake cycle of a two-pound machine.
Follow the instructions that came with your bread machine in terms of which ingredients to put in the machine first.
Select the cake setting. I used the medium crust setting.
Note that I use bread flour in this recipe. That’s because I use bread flour for everything. All-purpose flour or cake flour should also work.
If your bread machine allows it, take a spatula and scrape inside of the pan down during the first few minutes of mixing.
Let the cake cool for a bit before turning it out of the pan.

3 large eggs, beaten
1/3 Cup milk
2 Cups bread flour
3 tsp. baking powder
1/2 Cup butter, melted
1 Cup sugar
1 tsp. vanilla extract

- 1/2 Cup (113.5 g) butter melted
