Anadama Bread Recipe — 22 Comments

  1. My dad made Anadama bread all the time when I was a kid. One of my favorites. So today, I had a snow day work from home and my new bread machine was delivered (in the snow!)
    30 minutes after delivery I had this wonderful recipe going and a pot of soup on the stove. Absolutely as good as my dad’s Anadama! Thank you!

    Just made this today and it is delicious. I used a cup of ww flour.

    1 cup water
    ¼ cup (85 g) unsulfered molasses
    2 cups + 1 TBL (297 g) all purpose flour
    1 cup (120 g) ww flour
    ¼ cup (35 g) cornmeal
    1 tsp (7 g) salt
    2 TBLs (24 g) olive oil
    1 teaspoon active dry yeast

    Please note: my flour weights and King Arthur’s flour weights do not match. I don’t know why, but I’m not arguing with success. It makes substitution difficult. I use Kirkland all purpose flour and grind my own hard red winter wheat buds for whole wheat.

  3. I’ve made this bread twice with my new bread machine. I have lots of all purpose flour so I used it, but I added 1-1/2 tsp vital gluten for each cup of flour. You have to omit an equal amount of flour for the gluten. For the second loaf I subbed 1 cup of whole wheat for white flour. Came out nearly perfect, my favorite everyday bread so far. Thanks for the recipe!

  4. Read the Anadama bread then saw the Molasses Oatmeal bread and couldn’t make up my mind so I made a Molasses Cornmeal-Oatmeal bread.
    Used the Anadama recipe and increased water to 1-1/2 cup, added 1/3 cup of old fashioned oats, upped yellow corn meal to 1/3 cup.
    Fired up the Zoji and got a great, light- textured bread with a hint of sweet

  5. Cornmeal…..white or yellow? I assume not self-rising cornmeal mix? Being a southern gal we have some options others may not.

  6. Oh My! This is a heavenly loaf with wonderful flavor, texture and aroma. It’s right up there with the Sour Milk & Hawaiian bread. I’ll be making a lot of this for certain.

  7. This is by far the best bread machine recipe I’ve ever tried. I have a Sunbeam 5891. Used to live in Ipswich, Mass, where the local bakery made delicious Anadama bread, so was very excited to try this. Mine is better!!! I added the ingredients in the order listed, used fine white cornmeal, and programmed the bread machine to have it ready in the morning. I accidentally programmed for a 1.5 pound loaf with light crust. I’m afraid to change a thing! Came out absolutely perfectly. Rich, delicious flavor, slices nice and thin without falling apart, for sandwiches. My family devoured half a loaf before the end of breakfast.

  8. We tried this bread and it is now a STAPLE! It’s so delicious. Hearty, but slightly sweet. It works for sweet or savory applications. It makes the absolute best cinnamon toast ever. I love the fact that it only has a few ingredients. Thanks for your site. I love it.
